Banquet (extra charge)
The banquet on Wednesday evening is a voluntary event, which costs 40 euros to be paid at the registration. The banquet blends Zhejiang and Cantonese culinary traditions with seasonal ingredients. Below is an overview of key dishes:
1. Cold Dishes & Appetizers
Zhejiang Herbal Clear Broth (浙江清补凉): A chilled soup with handmade pork balls, Tianmu Mountain dried bamboo shoots, and mustard greens, infused with local herbs like "June Frost" for a refreshing, mildly herbal taste.
Purple Perilla Duck Shreds (紫苏凉拌绍兴麻鸭丝): Shredded Shaoxing duck tossed with purple perilla leaves, highlighting herbal aromas and tender texture.
Drunken "June Yellow" Crab (熟醉湖州六月黄): Fresh crab marinated in aromatic wine, prized for its delicate, melt-in-the-mouth richness. White-Boiled Pingyang Bamboo Shoots: Sweet, crisp bamboo shoots served simply to showcase seasonal freshness.
2. Main Courses
Mullet Trio Stew (鲻鱼三烩): A summer specialty combining fish balls, fish stomach (texture like duck gizzard), and fish liver, simmered with lemon pepper for a light yet complex profile.
Lotus-Wrapped Steamed Pork (荷香紫苏籽粉蒸肉): Pork belly coated in mung bean powder and perilla seeds, steamed in lotus leaves for floral fragrance and tender texture.
Stewed Qiandao Lake Fish Head (藿香拆烩千岛湖鱼头): A hearty dish with fish head slow-cooked in broth with fresh agastache (藿香), balancing richness with herbal freshness.
Charcoal-Grilled Bamboo Shoots with Ham (炭烤火腿马蹄笋): Thick bamboo shoot slices grilled with savory ham, creating a smoky-sweet contrast.

4. Signature Noodles & Dessert
